The Barefoot Be'stro was created by me, Chef Nicole Ross of LeCordon Bleu Las Vegas, and my mother D'arla R. Brown. We have been open for busines on the island of Vieques, Puerto Rico for 2 going on 3 years. We both are in love with Vieques, and the islands, and love our night time job running our very unique and personable resteraunt in Isabella II. Chef Nicole Serves delicious, and artistic Italian cuisine every day from 5-9pm except for Tuesdays when we are closed. Willem's Bake Sale is open all evenings and he sells cupcakes, cookies, and well whatever we decide to make him that day.
Chef Nicole Ross started out her culinary training as a child in her mothers family owned and opporated business in Mesa, Colorado. She was cooking and running the kitchen at the young age of 15. She learned the basics of culinary through and through.
She then moved the the U.S. Virgin Islands where she continued to work under a Chef at the Ellingtons Resteraunt, and various other caribbean resteraunts. She has always had a great love and passion for the culinary profession. After working under various Chefs in the Virgin islands she decided to attend a Culinary Collage.
Chef Nicole Ross graduated LeCordon Bleu Las Vegas in 2007 with honors. She had great offers to work for top Chefs in Paris, California, Las Vegas, and others. She chose to open her own resteraunt on Vieques, PR. She is now serving lucky Vieques locals, and Vieques Vacationers delicious Italian Cuisine.
